Pistachio Cocoa Brownies

Uh, what?


Yeah, brownies… Now, just as with the bread, these are an ongoing project. These are tasty as is, but I’m tweaking for perfection. I’ve already got some adjustments in mind, but for now, you can have fun making and eating these…

4-6 oz of 70% or higher dark chocolate melted and cooled (I used 86%, these were really rich!)
.5 cup of coconut oil or grass fed butter (I prefer the butter here)
.5 cup pure maple syrup
.25 cup of Almond Butter
.5 cup of unsweetened cocoa (For this round I used dark chocolate cocoa)
3 eggs

.25 cup of chopped pistachios (I used salted, but that’s just a preference, it adds to the overall experience)
1 tsp of cayenne pepper (Do it!)
1 tbsp cocoa

Mix the eggs, butter, syrup, almond butter and melted chocolate together. Whisk in the cocoa powder until well incorporated. Pour into your favorite greased brownie pan. I have this cool one with separators built in, more edges = better.

Bake at 375 for 20 minutes, or until toothpick comes out clean. Let cool, make some coffee and enjoy!
