I didn’t know how much I loved squash until now. They’re so versatile as well! This is an easy one-off side for a main dish. I often use peppers in my recipe’s, hey what can I say, I’m Mexican!
1 Butternut Squash
Cube the squash into one inch cubes.
Arrange on a baking sheet. Dust with cayenne pepper, sea salt, powdered ginger and cinnamon.
Bake at 400 degrees for 50 minutes until tender.
An alternate method would be to cut the squash in half, scoop out seeds. Dust inside with cinnamon, cayenne, sea salt and powdered ginger. Place face down on a baking sheet. add about 1/4 of an inch of water to pan. Bake at 400 degrees for 55 minutes. Then you can take it out, let rest for about 10 minutes, cut up and serve.
Also a great method for spaghetti squash and acorn squash.
